Have you changed your formula for simple syrup? It used to be 3.5:5 sugar to water. Your latest calculator has three “sweetnesses”. Low sugar is 1:1 and the next two have MORE sugar than water. I’ve worked hard at bringing two fifths of 151 Everclear (zest of 12 lemons each) and seriously filtered and want to use the “proper” simple syrup formula. Any advice?
